Food Review: Ebi Bar At Cuppage Plaza | Modern Singaporean Noodle Bar With Umami Prawn Broth

The Place Cuppage Plaza is probably one of the most overlooked building in Orchard Road for dining. Located at the basement of the building is the few weeks old 22-seater restaurant Ebi Bar. Ebi Bar is a modern Singaporean noodle bar that focuses on serving up umami prawn broth, and is a wholly homegrown concept by The Eminent F&B Group, and helmed by Partner and Head Chef, Jeff Tong. It is a no-frills and causal space where you simply order via the QR Code on your table. Going contactless is the way to go these days. The Food The menu here focuses on Singaporean flavours across the dishes along with a tinge of other cultures within. The signature dish is the “Chao Da” or Charred Ebi Noodles (S$14.90), served with a pair of prawns. The broth is rich and sweet from the many hours of soaking the prawns, 8-10 hours to prepare and with 40kg of prawn shells and heads as I understand from the team. Pretty interesting presentation too, as the noodles is served in a dim sum basket. The noodles are made in-house.
