What’s Buzzing? The One-Michelin Star restaurant Shang Palace in Shangri-La Singapore welcomes its new Executive Chinese Chef Daniel Cheung who has 37 years of culinary experience under his belt, with the most recent being one-Michelin starred Shang Palace Kowloon. New dishes are introduced to the menu at Shang Palace Singapore with Chef Daniel on board. What To Expect? Many of Chef Daniel star dishes in Hong Kong are featured in the new menu. Expect dishes like the Applewood Smoked Bean Curd Rolls with Shiitake Mushroom, Carrot and Green Mustard (S$18) where the Bean Curd Rolls rolls are finished by smoking over the steamer with Pu-er tea, sugar and uncooked rice, which impacts a nice smoky flavour to the bean curd. The Fried Rice with Kagoshima Wagyu Beef served in Whole Tomato (S$28) is quite a unique dish which I have never come across before. You get that natural sweetenes of the tomato in the rice with bits of the beef. There are also classic Hong Kong dishes such as chef’s ‘personal’ versions of the Cantonese Style Crispy Chicken (S$38), where the chicken skin is crispy, and the meat is very tender for all parts.
