What’s Buzzing? New East Wing look for The Ritz-Carlton, Millenia Singapore, which now include a Library Reception and a new food and beverage concept, Republic. The new concept took over the space of what used to be Chihuly Lounge. A historical trivial fact of Republic is that it is a symmetrical concept to the hotel’s West Wing which houses Colony restaurant. Colony alludes to Singapore’s British colonial history, while the new Republic signifies the formation of the Republic of Singapore in 1965. Other than evening bar bites and drinks, lunch and afternoon tea are also served. What To Drink? The cocktail menu centres around historical anecdotes originating from Singapore, the United Kingdom, the United States of America and Italy; and a curated selection of the finest vintage spirits epoch of the 1960s. Go for the Mythical Beast (S$25) if you are a gin lover, a concoction of Brass Lion Dry Gin, Dry Sherry, Port City Syrup and Orleans Bitters. The bartender will be more than happy to explain the historical anecdote behind the drink. A stronger and citrusy alternative to the Mythical Beast is the Mr. Pickles (S$25), a concoction of Widges Gin, Strawberry Vinegar, Raspberry Syrup, Lavender Bitters, Citrus and Egg White.
