The Place A relatively new and low-key restauarnt has opened quietly in Duxton Road late last year. Meet Dill, a rare Scandinavian restaurant in Singapore which took over the now-defunct Yue Bai. The interior of Dill still takes on the wooden furnishing from its predecessor, along with changes to the tables and seating arrangement to suit the casual fine-dining space better. The concept of Dill is helmed by Norwegian Chef Daniel Hasvold Jung-Eldøy, who has worked at Michelin starred The Square London and Fauna Oslo previously, before he opened his first restaurant in 2017 – Restaurant Galt in Oslo – which received a Michelin star in January 2018. In 2020, he closed Galt to open Restaurant Schlagergården which opened in 2021 and was awarded a Michelin star the following year. The Food The menu is a mix of set menu and ala carte dishes, where Chef Daniel aims to showcase Scandinavian, laid back, fine dining style of cooking – in Singapore.
