The Place Located beside the newly opened Spanish fine-dining restaurant Sugarra, Ka-Mon is a new casual Japanese restaurant by Resorts World Sentosa in Hotel Michael helmed by Chef Hal Yamashita. The space of Ka-Mon is huge, an 80-seater interior designed by the internationally renowned Steve Leung Design Group (SLD), where you can expect warm natural wood tones, bamboo accents, and soft lighting. There is an open kitchen station which diners can witness the art of grilling up close as it focuses on three traditional Japanese grilling techniques – Irori (sunken hearth), Robatayaki (fireside cooking), and Warayaki (straw-fired grilling). The Food The dishes here is a take on “New Japanese” cuisine where you can expect modern twists to Japanese ingredients from an ala carte menu. I started with the Organic Eggs & Ikura (S$12) which has soy-marinated ajitsuke tamago, ikura, and Hokkaido Uni topped with freshly grated wasabi. The Wagyu Beef Tartare (S$26) has different aspects of Asian touches where the chopped Wagyu beef is seasoned with soy, garlic, sesame, and a touch of gochujang (Korean chili paste).
